This dish can be cooked on the grill using indirect heat if you have a perforated grill pan that won’t allow the meat to fall through.

Ingredients:

  • 1 lb lean ground beef
  • ½ lb ground pork
  • ½ lb ground veal
  • 1 raw egg
  • 1 cup diced cooked smoked bacon
  • 3 boiled eggs (about 8 minute)
  • 1 cup thinly sliced onions
  • 1 small onion, grated
  • ¼ teaspoon liquid smoke
  •  ¼ teaspoon ground chipotle pepper
  • 1/8 teaspoon hickory smoked salt (Use regular salt if you can’t find smoked salt)
  • ¼ teaspoon ground cumin
  • 1 cup barbecue sauce (use your favorite brand or homemade)
  • 2 cloves crushed/pressed garlic
  • ½ large red Bell Pepper, large dice
  • ½ large green Bell Pepper, large dice
  • ½ cup bread crumbs
  • ¼ cup milk

 

Directions:

 

  1. Sauté and caramelized the sliced onions.  Set aside and cool completely.  In the mean time peel the boiled eggs. Set them aside and cool.
  2.  Mix barbecue sauce with liquid smoke over a low heat for 15 minutes.  Set aside.
  3. To the breadcrumbs, add ground meat, raw egg, milk, grated onion, diced red & green peppers, cumin, smoked salt, garlic and bacon.  
  4. Using a loaf pan to shape the meat loaf, put half the meat mixture into the pan. 
  5. Using your hand make a row the length of the pan.  In the indentation layer the caramelized onions and then top the onions with the boiled eggs.  Cover the eggs with the rest of the meat mixture.
  6.  Invert the formed meatloaf onto perforated grill pan. 
  7. Using the indirect cooking method* place the meatloaf on a perforated grill pan cook on a charcoal grill.  Close the grill.
  8. Grill using indirect heat for 40 minutes.   After 40 minutes of cooking brush on the barbecue sauce mixture every five minutes for 20 more minutes. 
    Place the meatloaf on a warm platter.  Cool for ten minutes before slicing. 
  9. Each slice will have a nice surprise of onions and egg.  Serve the remaining barbecue sauce on the side. 
  10. Serve with your favorite potato dish or baked sweet potato fries.

This meatloaf can be cooked, in the oven on a cookie sheet if it is to cold to grill outside. 

Heat the oven to 350 degrees and follow the above directions.

Ground turkey can be substituted for any or all the other ground meats.

 

* Indirect cooking method:   A hot coal fire on one side of the grill and the food is place on the other side of the grill away from the direct fire.
